Chocolate & Pecan Quinoa Muffins

So last night I was in the baking mood and decided to try out a new recipe. I had seen this recipe from Martha Stewart a few weeks back and decided to alter it a bit to suit my taste. The outcome was surprising and unusual. Whilst the muffins are light and fluffy, I think the quinoa needed a little longer to as it was very al dente. I followed the directions exactly as Martha’s recipe however here is my ingredients list: 

  • 1 cup semolina
  • 1 cup self-raising flour
  • 1 egg
  • ½ cup light cooking cream (I used Bulla)
  • ¼ cup water
  • ¾ cup golden syrup
  • ¾ cup quinoa (I ran out)
  • 1 egg
  • ¼ cup dark chocolate chips
  • ½ cups chopped pecans
  • ¼ cup oil (I used rice bran oil)
  • 1 teaspoon vanilla extract 

I wish I had have been a little more creative with my display!

They turned out really well however I think I need to play with the flavours a bit more before they are perfect. I did take them to work today and no one spat them out so I am guessing they are above average. I would definitely try these again!
